Ruthie Collins on Healthy Eating…
I was raised by vegetarian. At least half raised:) My mom has been an extremely healthy eater since before I was born… (Although I hear in the 70’s she made an AMAZING bolognese sauce…) So yeah, by healthy I’m talking no snacks in the house. When I would get home from school I’d make myself eggs because there were no chips, no deli meat for sandwiches, no packaged cookies.
So naturally, when I went to college, I ate… A lot… of junk… Pizza, bagels, pasta, candy. Definitely went a little crazy on the other side of the spectrum. But soon after, I realized my mom was pretty much right about everything… That not only does just make me gain weight and have my skin break out, it also makes me feel like..well like junk.
So these days I try to be balanced about what I eat. But I am not perfect. I think food will probably be a struggle for me for my whole life. I just like pizza too much!!! But, on most days, I try to have a green smoothie for breakfast and I try to stay away from gluten and sugar. And if I’m feeling extra awesome I stay away from dairy as well…

I love me some kale salad. It’s one of my favorite things to bring to a party because it’s really easy to throw together and always a crowd pleaser!
You know I had to start this out with something buffalo! Seriously, buffalo cauliflower is a gift from God. It is sooo stinkin good and it actually tastes like boneles buffalo wings. Just. Amazing.
And the green smoothie! There are days I really don’t feel like another green smoothie but I’m always happy after I eat it beause it gives me SO much energy through the day! My go to ingredients are spinach, a banana, frozen pineapple, and any other fruit I have on hand. I like to stir in chia seeds after it’s all blended together. I also add any super foods I have on hand as well.
